(Serves 4)
- 1 cup green Granny Smith apples, chopped or julienned
- 1 tablespoon lemon juice
- 8 cups of chopped purple cabbage
For the dressing:
- Handful mint or chopped fresh mint or mint
- ¼ cup avocado or olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon sucralose or stevia
(Serves 4)
- 1 cup green Granny Smith apples, chopped or julienned

For the dressing:

In a medium bowl, mix all dressing ingredients until well combined.
In a large bowl, toss all salad ingredients with dressing and enjoy.
